Ceramic pans

Coated aluminium pans are ideal for gently and crisply frying delicate foods without anything sticking. But there are differences here too, because the non-stick coatings can be made from various materials.

The most popular is the classic coating made from polytetrafluoroethylene, or PTFE for short. Ceramic pans, on the other hand, are made without the use of PFAS (per- and polyfluorinated alkyl substances) or PTFE. Fissler ceramic pans also have a ceramic coating made without PFAS/PTFE.

Fissler ceramic Frying Pans are an excellent alternative to conventional Frying Pans with a PTFE coating. They feature a durable surface and also offer very good non-stick properties.

With a coated ceramic Frying Pan, you can fry particularly responsibly. Nevertheless, the PTFE-coated Frying Pans from Fissler are also safe for your health. In accordance with EU Regulation No. 2019/1021, all Fissler Frying Pans are PFOA-free.

Use

How to use ceramic coated pans

Fissler has optimised the thermal properties of crack-prone Ceramic Coating: for the Ceratal® coating, a more elastic bond between the metal and the ceramic coating has been created. This reduces cracking and preserves the non-stick properties.

The surface of ceramic frying pans reacts to heat similarly to other ceramic items, e.g. oven dishes:

If the temperature is increased suddenly, the metal expands faster than the surface and the ceramic can develop cracks.
Conversely, damage such as cracks can occur due to what is known as thermal shock. This happens when the hot Frying Pan is cooled suddenly under cold water.

Food residues, e.g. fats, can stick in the cracks that form. These damaged areas act like suction cups on the food being fried, "holding" it in place. This reduces the non-stick properties.

To preserve the non-stick properties for as long as possible, you should therefore:

Heat it slowly and evenly
Do not cool the Frying Pan suddenly under cold water while it is hot.

Cleaning & Care

Cleaning and care of ceramic pans

Despite the high quality of Fissler ceramic Frying Pans, the lifespan of the ceramic coating depends on care:

Prolonged simmering of acidic foods or Cleaning in the dishwasher roughens the Frying Pan surface. As a result, it can quickly lose its non-stick properties.
The use of aggressive and abrasive materials also has a negative effect on the non-stick performance.

To benefit from the non-stick properties of your Frying Pan for as long as possible, you should:

Clean it particularly gently by hand after each use. Use warm water, a little dishwashing liquid, and a soft cloth.
Do not treat it with abrasive agents or scratchy cleaning sponges. Cleaning in the dishwasher is also not recommended.
