Zucchini Patties with Goat Cheese, Arugula and Figs

Ingredients
| 1 | Zucchini |
| 1 pack | fresh goat cheese rounds |
| 3 | figs |
| A handful | pecans |
| 1 pack | arugula |
| olive oil for frying | |
| 2 tbsp | olive oil for the dressing |
| 1 tbsp | sweet mustard for the dressing |
| Juice of 1/2 | lemon for the dressing |
| A splash | apple cider vinegar for the dressing |
| salt |
Instructions
Step 1 of 7:
Slice the zucchini into thin strips with a vegetable peeler.
Step 2 of 7:
Lay two zucchini strips crosswise on top of each other. Place a cream cheese medallion in the middle and fold the ends of the zucchini strips over the filling one after the other so that small parcels form.
Step 3 of 7:
Drizzle the Ceratal® pan with a little olive oil and preheat it. Add the zucchini patties and fry them on both sides for about 4–5 minutes each until golden brown and crispy.
Step 4 of 7:
For the dressing, stir together olive oil, sweet mustard, lemon juice, apple cider vinegar, and salt.
Step 5 of 7:
Arrange the arugula on a platter and toss with some of the dressing.
Step 6 of 7:
Slice the figs into thin rounds. Arrange them on the arugula along with the crispy zucchini patties.
Step 7 of 7:
Roughly crumble the pecans and sprinkle them over the top. Serve with the remaining dressing.
